Zucchini Brownies

2 C. flour 1/2 C. veg. oil
1 1/2 c. sugar 2 tsp. vanilla
1 tsp. salt 2 c. zucchini (finely grated)
1 1/2 tsp. soda
1/2 c. cocoa

Blend together and pour in greased 9 x 13 pan.
Bake at 350 for 35 - 40 minutes.

Frosting

1/2 c. brown sugar
1/3 c. water
2 oz. (1/4 c.) semi-sweet chocolate chips
3 Tbs. butter
1 tsp. vanilla
1 1/2 c. powdered sugar (I always have to use more
for the right consistency to spread)

Boil sugar, water, and choc. chips for 3 min. Remove
from heat. Stir in butter until melted. Add vanilla &
powdered sugar. Frost while brownies are still warm.
